This summer, I have been stewarding a 6-acre ranch property outside of Autin, Texas. My mom was in town, and it was the perfect time to host a dinner party. For me, nothing is more heartwarming than a bringing community together. Although I did not have a big enough table to seat everyone, I was determined to make something beautiful, even if it meant arranging my moving boxes and covering them with a tablecloth! Because it’s really about love, right?

Yes, it is. Although, the infamous Mark Korzenowski came through with my vision and created a beautiful 12-foot-long table out of scrap materials. It was even more elegant than I imagined with 17″ cedar legs and a hefty hardwood top. We adorned the house and table with flowers, pitchers of lemonade, wine, and the smell of toasted garlic bread. This Roasted Red Pepper Pasta was a hit as the centerpiece.

Versatile, Easy and Delicious

We had a diverse crowd. Kids, vegans, gluten-free, and everything-eaters. I wanted to create something that was near effortless to prepare. Knowing I needed to stretch my pennies, pasta came to mind. This Red Pepper Pasta was a hit. I prepped the sauce the day before, so all I had to do was cook the pasta. Together we assembled a big salad, steamed broccoli, and toasted garlic baguettes. I love a busy kitchen 🙂

You can easily create this recipe to be gluten-free or high-protein depending on your pasta choice. I love Banza Pasta for both of those options, as they are made from trusty chickpeas. Occasionally I love a comforting classic Italian pasta, which I used here. For the party, I omitted the chili flakes and had them on the table as a side. The kids loved it.

Red Pepper Pasta

Creamy red pepper sauce recipe for pasta with under 10 ingredieants

  • blender
  • 2 Red bell peppers
  • 2 Cloves Garlic
  • 1/4 cup Avocado Oil
  • 1/2 cup Cashews
  • 3/4 tsp sea salt
  • 1/2 tsp fresh black pepper
  • 1 tsp onion powder
  • 1/4 tsp red chili flakes
  • 1/2 lb pasta of choice
  • 1/2 tsp lemon juice
  • 1/4 cup chopped herbs for garnish, optional (Parsley, Basil, Thyme, chili flakes, ect.)
  1. Soak cashews in water overnight

  2. Preheat oven to 375°F

  3. Wash bell peppers and separate 2 cloves of garlic

  4. Add bell peppers and garlic to the preheated oven and roast for 30-35 minutes or until charred.



  5. Transfer the peppers and garlic to a bowl, cover and let sweat for 30 minutes



  6. Remove the seeds and stems and peel the skin off of the peppers and garlic. It should come right off.



  7. Add the peppers, garlic, avocado oil, cashews, salt, pepper, onion powder, chili flakes and lemon juice to a high speed blender and blend on high untill very smooth, scraping down the sides as neccessary.

  8. Cook the pasta until al dente. Strain, do not rinse, and add pasta to the sauce.

  9. Garnish with fresh or dried herbs, as desired.

How much sauce does this yield?

This recipe makes 1.5 cups of sauce in total. 

I did not plan ahead and soak the cashews! Is this necessary?

You can speed this up by soaking the cashews in hot water for 30 minutes, or even a better hack, boiling them for 20 minutes. The overnight method will provide the smoothest texture, so I recommend taking this step when you can.

Can I use canned bell peppers for this recipe?

Yes, you can use canned roasted bell peppers. Be careful to buy a quality brand and check to be sure there is no added ingredients besides salt and water. 

What kind of pasta did you use?

I used Mezzi Rigatoni from Rummo. This shape holds this thick sauce well. You can use any regular, gluten free, or even chickpea pasta.
